Post Oak Barbecue Moves Forward on Second Denver Location Near DU

DENVER, CO — One of Denver's popular barbecue restaurants is one step closer to opening a second location. Building permit applications are now under review for a tenant finish at 1737 E. Evans Avenue, where Post Oak Barbecue plans to renovate the former Sawa Mediterranean Restaurant space into a new full-service restaurant and bar just west of the University of Denver campus.

Rather than constructing a new building, the project would renovate the existing restaurant into a new full-service restaurant and bar. According to permit documents, the remodel carries an estimated construction valuation of $412,600 and includes architectural, electrical, mechanical, plumbing, and demolition work.

Founded by Nick Prince, Post Oak Barbecue opened its original Tennyson Street location in 2019 and has become known for serving Texas-style barbecue. The Evans Avenue restaurant would mark the company's second Denver location as it expands into the University Park area.

Plans submitted to the City and County of Denver show the remodeled restaurant will occupy approximately 4,842 square feet and include seating for 61 indoor guests along with 32 patio seats. The renovation also includes a new commercial kitchen, updated dining and bar areas, upgraded electrical and mechanical systems, and exterior improvements to the existing building.

Permit documents indicate the restaurant would operate Tuesday through Thursday from 11 a.m. to 9 p.m., Friday and Saturday until 10 p.m., and Sunday until 9 p.m., with Mondays closed. The business estimates serving up to 150 meals per day, with roughly one-quarter of orders expected to be carryout.

The project remains under review by several city departments. Initial review comments have been issued by zoning, electrical, sewer, and public health reviewers requesting revisions and additional documentation before construction permits can be approved. Those comments include updates to plumbing and electrical plans, grease interceptor verification, and zoning documentation.

According to previous reporting, Post Oak Barbecue is targeting an opening later this year, pending completion of renovations and final city approvals.
