Red Lotus Den Breaks Ground on New Food Hall in Downtown Westminster
WESTMINSTER, CO – Construction is officially underway on Red Lotus Den, a new 15,000-square-foot food hall and nightlife destination set to open in summer 2026 at Sherman Associates’ Aspire Apartments in Downtown Westminster.

A Next-Generation Food Hall
Unlike a traditional food hall, Red Lotus Den will provide full-service dining with table-side ordering from seven different restaurants, offering a curated mix of Chinese, Japanese, Korean, Italian, and more. Guests will also find an immersive atmosphere that blends dining and entertainment, designed to make Red Lotus Den an all-night destination.
The project spans two floors, anchored by a central bar on the first level and additional features on the second, including karaoke and party rooms, a conference space, and another bar. The eatery will seat 675 guests indoors with patio seating for about 50 along Central Square Plaza.
“Every detail, from the design to the guest experience, has been thoughtfully curated to exceed expectations,” said operator Henry Lee, who also brought Bonchon Korean Fried Chicken and Salady to Westminster.
A Catalyst for Downtown Westminster
Red Lotus Den is considered a key piece of Westminster’s next phase of downtown redevelopment. Mayor Nancy McNally highlighted the project as a new gathering place that will activate Central Square and provide both residents and visitors with diverse culinary and entertainment options.
Sherman Associates, developer of Aspire and nearby Ascent, has been working with the City of Westminster on a broader vision for a walkable, transit-connected downtown. George Sherman, founder and CEO, described Red Lotus Den as “a major step forward in realizing Westminster’s long-term vision for its downtown.”
Local Leadership
Lee, who opened his first Bonchon franchise in Denver in 2018 and now operates six Colorado locations, is playing a central role in shaping the city’s restaurant scene. Red Lotus Den adds to his portfolio of projects in Downtown Westminster and reflects the city’s broader strategy of combining housing, retail, and cultural amenities.
Opening Timeline
Red Lotus Den is scheduled to open in summer 2026 at 5815 West 89th Avenue. Once complete, it will join other Sherman Associates projects that have helped establish downtown Westminster as a growing hub for residential, retail, and entertainment activity.
