Som Dee Signature Files $144K Tenant Finish for Larimer Square Buildout

DENVER, CO – Som Dee Signature is officially moving through Denver’s permitting process for its planned Larimer Square location.

A building log filed for 1442 Larimer Street outlines a $144,000 interior renovation of the existing restaurant space, confirming the project is advancing toward construction. The space previously operated as CRÚ Food & Wine Bar. The permit, currently listed as Review in Progress, describes a full tenant finish including:

  • New food service equipment

  • A new lower level bar buildout

  • Interior finish upgrades

  • Mechanical, plumbing, and electrical system updates

The project is classified as a commercial tenant remodel within a D-C zone district. No exterior modifications are proposed. The one story, 3,125 square foot space will remain an eating and drinking establishment, with no additional square footage added. While the main dining level will continue operating as a traditional restaurant space, the permit confirms a new lower level bar component, aligning with previously reported plans for a more refined, multi-course tasting experience in the basement. No exterior work, parking changes, or structural expansions are proposed as part of this phase. The renovation focuses entirely on interior transformation and operational upgrades.

Fluency Architecture is listed on the permit and is currently serving as architect of record.

The expansion marks the third Denver restaurant from owner Orrapan Botthaisong, who began her culinary career locally with a food truck before opening La Mai Thai Kitchen in Edgewater in 2022. She followed that with Som Dee Thai Kitchen in Uptown in 2024. The opportunity emerged when the former wine bar space became available, presenting a chance to bring the brand into one of Denver’s most visible pedestrian corridors.

Som Dee Signature is expected to build on the Uptown menu while introducing a more refined experience. Plans call for a split format, with a traditional dining room on the main level and a separate multi course tasting experience in the basement space. The downtown kitchen is expected to be led by a chef with approximately 20 years of experience cooking in Phuket.

If approvals move forward without delays, the restaurant is targeting a late summer opening.
