BOXBOX Expands Food Concept with New Dining Room on East Colfax
DENVER, CO – A fast-casual concept on East Colfax is expanding its footprint, as BOXBOX has officially opened its dining room following a December launch.

Located at 5038 East Colfax Avenue, the restaurant was originally built around a pickup and delivery model, serving customizable, bento-style salad boxes designed for both individual meals and group orders. The addition of a dining room marks a shift toward a more traditional in-person experience.
The concept centers around mix-and-match salads, allowing customers to build their own combinations from a rotating selection of chicken, pasta, and vegetable-based options. The format is designed to prioritize flexibility, with a range of gluten-free, vegetarian, and vegan offerings available.
BOXBOX was founded by husband-and-wife team Tim and Laurie, who bring backgrounds in both culinary operations and hospitality branding. Tim has worked in kitchen operations and restaurant development, including experience designing dining concepts for mountain resorts, while Laurie has focused on building and marketing hospitality-driven brands.

The interior reflects the brand’s positioning, with a bright, design-forward layout featuring bold colors, patterned walls, and a fast-casual service flow. Self-service kiosks and an open view into the kitchen reinforce a model built around speed, convenience, and accessibility.
At its core, the concept is built around shareable dining. The bento-style format allows customers to order multiple items in a single box, making it easier to accommodate different preferences within a group setting.
With the dining room now open, BOXBOX is shifting from a primarily off-premise model to a more balanced operation, offering dine-in, pickup, and catering options.
The restaurant is currently open Tuesday through Saturday from 11:00 a.m. to 7:00 p.m.
