Michelin-Recognized Pasta & Wine Bar Soda Club Opens Inside The Ramble Hotel
DENVER, CO — A Michelin-recognized New York restaurant has expanded to Denver, bringing a fresh pasta, natural wine and cocktail concept to Five Points.

Soda Club officially opened September 1 at 1260 25th Street, occupying the restaurant space inside The Ramble Hotel in the RiNo area of Five Points. The concept comes from Colorado native and James Beard Award-nominated restaurateur Ravi Derossi, a co-founder and current owner of Death & Co., alongside partner and wine director Drew Brady.
Derossi and Brady opened the original Soda Club in New York City's East Village in 2021. The restaurant has since been recognized as a Michelin Bib Gourmand selection for four consecutive years. The new Denver restaurant brings the concept to Derossi's home state while adapting both the menu and space for its Five Points location. Now executive Chef Amira Gharib leads the kitchen, with former Bistro Barbès chef-owner Jon Robbins serving as chef de cuisine. The kosher-certified menu is rooted in Sicilian cuisine while incorporating Mediterranean and North African influences.

Fresh pasta makes up a major part of the menu, with dishes including lumache with vodka sauce, harissa, charred cipollini and lemon tomatoes; casarecce with borlotti ragù, smoked paprika and kale; and gigli with truffle crema, fried leeks and lemon zest. The restaurant also serves Roman-style pinsa made with a long-fermented wheat and rice flour dough, along with shareable snacks, salads and desserts. One of the larger dining options is a five-course pasta tasting designed for the table that includes a bottle of wine.
Wine is another major focus of the concept. Brady curated a list of more than 200 natural wines from small independent producers spanning both New World and Old World regions. The list includes selections from Colorado's North Fork Valley alongside international producers. A smaller cocktail program complements the wine list with grappa-focused takes on drinks including the Negroni and Manhattan, along with spritzes and a house vermouth blend.

Beyond bringing the New York concept to Denver, the team also redesigned the restaurant space inside The Ramble Hotel. The finished restaurant can accommodate 70 guests indoors and another 30 on an enclosed sidewalk patio. The interior centers around a textured mural featuring a moon, raven and roses that stretches from the bar into the main dining room. New York-based European artists Sasha Vulakh and Anastasia Pronyayeva created the mural and also hand-painted emerald-colored tiles surrounding the open kitchen and purple columns with metallic marbling throughout the space.
Additional elements include stained-glass lamps, live trees, marble tables, velvet banquettes and a mix of seating throughout the dining room and bar. Soda Club is currently open for dinner nightly from 5 to 11 p.m. during the week and until midnight on Fridays and Saturdays. The Denver location is expected to expand its programming in the coming months. The team plans to introduce monthly pasta-making classes, similar to those offered by the original Soda Club, along with a separate pasta omakase experience at the chef's counter.
