District Pour & Provisions Opens with Four Food Concepts and Rooftop Patio

WESTMINSTER, CO – A new food hall concept has officially opened in Westminster, bringing four restaurant concepts, a 92-tap self-pour beverage system, and a rooftop patio overlooking the Front Range to the city's growing dining scene.

District Pour & Provisions celebrated its grand opening on June 13 at 3053 W. 104th Avenue. The new venue spans more than 15,000 square feet and includes a 5,500-square-foot rooftop deck, a covered dog-friendly patio, and a self-pour beverage wall offering beer, wine, cocktails, mocktails, soda, and children's beverages.

The project was developed by a group of Colorado hospitality operators whose experience includes several well-known destinations across the Front Range. According to the ownership team, the goal was to combine multiple dining options, flexible gathering spaces, and self-pour technology into a single destination where groups can customize their experience during each visit.

The food hall is anchored by four separate culinary concepts:

  • Chuchi-CO Sushi + Poke: Led by Chef Jesus "Jesusio" Silva, serves sushi, poke bowls, ramen, sashimi, and small plates. The concept incorporates seafood sourced from Japan and highlights Silva's experience across Denver's Japanese dining scene.

  • Alt 227: Focuses on pizza and paninos, featuring a proprietary dough recipe developed over more than a year. The concept plans to introduce Detroit-style pizza alongside specialty pies and handheld menu items.

  • Three Chickens and a Cow: Offering burgers, sandwiches, wings, empanadas, and other elevated pub fare built around premium ingredients and scratch-made components.

  • Squisito Gelato: Produces fresh gelato in-house with rotating seasonal flavors and customizable toppings.

The concept centers around a self-pour model that allows guests to sample and pour their own beverages from the 92-tap system while mixing and matching food offerings from each vendor. According to the ownership team, the approach was inspired by lessons learned from previous hospitality projects across Colorado.

District Pour & Provisions is now open daily from 11 a.m. to 10 p.m. Sunday through Thursday and 11 a.m. to 11 p.m. on Fridays and Saturdays
